This won't work. 

The basic design of TeXShop is that you may have
several documents open. Some might typeset with TeX and some with LaTeX
or some other engine.  Some documents might use the "pdftex" routte
and others use "TeX + DVI" route. 

The TeXShop menus, including the pulldown Engine menu on the source window,
act on a document by document basis. For instance, if you pull the
pdftex document to the front and then look under the Typesetting menu, you'll see that
"pdftex" is checked. But if you pull the TeX + DVI document to the front and then
look under the Typesetting menu, "pdfex" is unchecked and instead "TeX + DVI"
is checked. 

In contrast, Preference settings do NOT apply to currently open documents. Instead,
they select the default behavior when you first open a document, before you customize
it with menus. So changing the default typesetting script in Preferences doesn't affect
documents already open, but instead documents that you'll open in the future.
