Apparently, to save an rgb graphic in illustrator, it is not enough to edit the color to rgb and save, you must also un-check the option "Include CMYK PostScript in RGB Files" (shows up during Save As). If this option is unchecked, the file is processed by latex as RGB. If it is checked, however, Illustrator will open the file as RGB, giving the impression that the file was saved as RGB, but all other applications will read it as CMYK.
