Again to add something to Ross' reply, if you're using MacTeX 2010, I would recommend reading

/usr/local/texlive/2010/texmf-dist/doc/latex/mathmode/Mathmode.pdf

and

/usr/local/texlive/2010/texmf-dist/doc/latex/mh/mathtools.pdf


Also,

/usr/local/texlive/2010/texmf-dist/doc/latex/amsmath/amsldoc.pdf

/usr/local/texlive/2010/texmf-dist/doc/latex/amscls/amsthdoc.pdf
