The output of this command is somewhat cryptic.  However, testing on a dummy account (I used the third person in my original question on purpose: I hadn't actually done this myself) it seems that fmtutil generates ~/Library/texlive/2011/texmf-var

And this folder may be deleted with impunity (since my regular account doesn't have it.)
