I unzipped the pgfplots_unstable.tds file accordingly as you
suggested. Now, within ~/Desktop/Library/texlive/2010/texmf-var we
have additional folders labelled doc, scripts, source, and tex.

However, again, the unstable commands for pgfplots fail to run. In
particular, I'm using
\begin{tikzpicture}
\begin{polaraxis}
\end{polaraxis}
\end{tikzpicture}

and polaraxis fails to be recognized.

Is there a way to check exactly which version of pgfplots is being
used by latex?
