Did you press the Set button after setting the default magnification to 180 in TeXShop->Preferences->Preview->Fixed Magnification Amount? It will go back to its original setting if you don't press the Set button.

When you go back to the Preference setting after restarting TeXShop is it still set at 180?
I ask because I'm not seeing the problem.
