[OS X TeX] getnonfreefonts ... garamond

Hi
I am trying to use LaTeX for my PhD, which is in Classics. So not maths. I have no equations. But Greek and Latin.
I am trying to output my document in Garamond. I installed getnonfreefonts-sys and made it get the Garamond URW font.
I can make my documents use Garamond with;
\usepackage[urw-garamond]{mathdesign}
But as you can see, I don't really need to use the mathdesign package otherwise. How do I make my document (memoir/article) use all-garamond all the time?
Just as a general comment on TeX, in a former life I was a computer programmer of many years standing; so I'm not a computer neophyte, C, Smalltalk, Java, Python, /bin/ksh, none of that scares me (most of the time). I used to configure and compile my own Linux kernels before the days of fancy distros. However, with TeX I am, however, well out of my depth (obviously), I feel like I am once again a dumb first year student hopelessly stranded at the SunOS4 Unix prompt wondering how to accomplish the most simple of things. It's very painful to locate clear information that doesn't assume a whole bunch of other knowledge. I know that the most rewarding things in life are difficult ... but still.
