Howdy,
You can, of course, set a color for individual files by using a Label in Finder's File->Label (set the colors you want in Finder->Preferences->Labels). Then write an Applescript Macro that tells Finder to look for all files with .tex extension and set that Label for them. You could even set up the Desktop folder so that Macro is executed whenever that folder is accessed. (I haven't don't anything like this in a very long time and don't remember the exact procedure. I also am terrible with Applescript.)
Another, more adventurous thing, would be to create a custom tex.icns file with the color you want and substitute your icns file for the one in TeXShop. Not for the squeamish!
