Howdy,

The MacTeX installer checks what your default paper size for printing and sets the default accordingly. After that use TeX Live Utility's Configure->Change Paper Size… command.

It is always wise to set the paper size in any document that will be used by several people. The best way to set it on a document basis is to use the geometry package.
