I removed these as mentioned in <http://tug.org/mailman/private/mactex/2011-November/005955.html> and now things are working properly (at least over several re-boots, etc.). I actually rebuilt LaunchServices using Onyx (make sure you have the version for your OS) after editing the info.plist file and didn't try to simply move TeXShop.app out and then back into the /Applications folder; under Lion and Mountain Lion you can't simply drag it out to the Desktop since that automatically creates an alias---you must copy it and then Option-Paste it to the Desktop and then move it back.

I just did the same, that is, I quit TeXShop and then I removed every instance of:

<key>LSItemContentTypes</key>
<array>
	<string>org.tug.tex</string>
</array>

from TeXShop.app/Contents/info.plist. Within seconds, the document icons were fixed.
