Last I knew, Apple's Spotlight importer didn't handle encodings in any useful way, so that may be stopping it. It's been a few years since I looked into that.

Your best bet is to get a working importer that handles the edu.uo.texshop.tex type. If TeXShop still ships with a Spotlight importer, that type must be added to its list of UTI declarations and list of UTIs that it imports.
