Howdy,

In Finder open the folder holding your .tex files and then Type Cmd-J (View->Show View Options) and see if the Show Icon View checkbox is checked. If so, just uncheck it.

If you open a new folder and do that you can then set that as the default with a button at the bottom the View Options pane.
