Howdy,
That depends upon what you are doing. If the file has cross-references, uses the hyperref package, uses a TOC, bibliography, etc., it will do multiple runs. If the file is a simple one it may only run pdflatex the single time needed. In other words it checks to see if more runs are needed.
Also, How are you typesetting the file? You should be using Typeset->Typeset (Cmd-T) rather than Typeset->LaTeX (Shift-Cmd-L) which forces a single run of pdflatex; i.e., it bypasses the engine.
