Howdy,

The Typeset Menu only contains the ``engines'' built directly within TeXShop. All additional engines are stored as external .engine files (basically shell scripts) in ~/Library/TeXShop/Engines. The original engines as well as the additional engines are all displayed in the popup menu on the Source Toolbar.
