I can't say how it is for TeXShop.  However, I'm quite happy with the Retina iMac in my current workflow (Aquamacs Emacs, using AUCTeX, along with Skim).  One nice thing about the 27"-screen: When I'm doing reviews for Mathematical Reviews, I can simultaneously display the article I'm reviewing, my Emacs window, and the Skim preview, which is a big win.
