This concerns \cite. As to \ref, again in the case of TeXShop, press Command-Caps-R: a window with all the existing labels will appear, pressing on one of them will insert the corresponding \ref command. If you do this with some text selected, the list will bring out only those matching the selected text. This corresponds to the macro "Insert Reference" in the Macros Menu.
