Howdy,
What kind of `helper'? Just open a single .tex file in Finder, type Cmd-I to get the Info… window, open the `Open with:' section (if it isn't already open), choose TeXmaker in the popup menu, click on the `Change All…' button and agree that is what you want to do. You can repeat this for .cls and .sty files. If there are others that you use (e.g., .ltx) repeat as needed. No special app needed.
By the way, I'd guess the PDFKit Framework in El Capitan would use Metal rather than OpenGL on any system that was produced after mid to late 2012. Not on my mid-2011 iMac but I've never had the fan going crazy there either.
