[OS X TeX] experimental typesetting in TexShop

This is what happens when you don’t do latexing for a few months… There was a way to do experimental typesetting within the context of an open latex document whereby you can experiment in typesetting things without typesetting the entire document. I thought there was a menu item in the dropdown from Macros, but I cannot find it now. Any suggestions?
