I just rebuilt the pdf file from the source and am not having a problem with viewing it in Preview or TeXShop. I do have "Use LCD smoothing when available" checked and everything looks nice and sharp even on my non-Retina display. Maybe things have changed as far as that preference option is concerned.
I will say that Preview had a terrible time loading the original version of the pdf file which I got using `texdoc cormorantgaramond`.
There is definitely a problem with PDFKit in macOS 10.12.4 and not only with using tikz+pstricks and compiling with pdflatex. I compiled a simple file and it took a long time to display in TeXShop's preview window; subsequent compiles displayed quickly. I'm wondering if there is some caching going on when a new font that's unknown to the system is first displayed.
