Also, if you search for “memoir chapter styles” you’ll find a lot of information about formatting within memoir. This example shows all of the included chapter styles:

This is another fruitful search: “modify memoir chapter styles”. Substitute “section” for “chapter” in the above. I think I also found this helpful:
