[OS X TeX] How use pdflatex-dev and xelatex-dev with TeXShop

The better way is to leave that preference setting as is. Instead, create a new engine. To do that, duplicate the existing XeLaTeX engine, and replace xelatex by xelatex-dev in the new copy. Or replace xelatex by pdflatex-dev to get a pdflatex-dev engine.
In general this is the way to use any experimental or new engine.
