Given the confirmation by Herbert Schulz that Gentium type 1 is indeed 
missing in MacTeX TL2025 (he uses Mac, I use Linux now), and the 
messages shared by Guillermo, what I would advise you to do is to use 
TeX Live Utility to switch to TL2024 if you want to continue using pdfTeX.

Otherwise, you can use the gentium-otf package (and corresponding fonts) 
provided by Herbert Voß in TL2025, but that means using XeTeX or LuaTeX 
instead of pdfTeX.

If you haven't use XeTeX or LuaTeX before, maybe switching to TL2024 is 
the easiest way.
