This is easy. Click on the TeXShop icon while holding down the Control Key. A menu
will appear with various items and the second item will be "Show Package Contents".
Select that.

A standard Finder window will appear showing the folder named "Contents". Inside that folder
are several other folders including one named "Resources." Inside this folder is
a subfolder named "Base.lproj." Inside this folder are many items including "Manual.log"
and "Manual.pdf".

Drag a copy of "Manual.pdf" to your desktop. Now you have the manual.

(Warning: I'm looking at TeXShop in Tahoe beta; I think you'll find more of less
the same folder structure elsewhere.)
