To find out where a function like latex-mode is defined, type

C-h f latex-mode RET

you may need to enter latex-mode first in order to load the package.

The help tells you that it is defined in some source file.  Click on  
it to load it, and you'll see (e.g. with C-x C-w) where it's coming  
from.  If it's from anywhere outside the app bundle, you'll have also  
found the solution to your problem.
