Absolutely, but you'll have to adapt SAS-mode-font-lock-keywords.  You may have to load the ESS file (require 'ess-site) or something like this before you modify it.  If you're not familiar with this sort of stuff, you can ask the ESS people or hire an Emacs person around here to do it for you (won't take long).

Yes, that's easy, just customize (Options menu) the variable `aquamacs-known-major-modes'.
