AUCTeX determines the type of document automatically. From the menus  
you can't change anything – the mode is already given, but after you  
type C-c C-c you can cycle through all known *TeX commands. Another  
option is to add file local variables:

	%%% Local Variables:
	%%% mode: LaTeX
	%%% TeX-engine: xetex
	%%% fill-column: 99999
	%%% coding: utf-8-unix
	%%% TeX-command-default: "XeLaTeX5E"
	%%% End:
	%

You can change the mode manually. Finally it's worth reading the  
AUCTeX manual.
