[Mac OS X TeX] Fontenc Package/Crash

Supposedly hyphenating in German works better with EC fonts and supposedly
one can simple use
\usepackage[T1]{fontenc}
Unfortunately the following fonts are missing:
mktextfm ecrm1200
mktextfm ecrm1095
mktextfm ecrm1728
mktextfm ecbx1728
But according to my reference, "The not so short Intro...", they are
included in most distributions. So my question: does the TeXShop version of
teTex not have them (I couldn't find them)?
On another note, TeXShop does a substantial amount of crashing - i.e., not
just the program, but also forced logout. Anybody else seeing this? Any
workarounds?
