TeXShop now can accept iso latin 1 encoding
this corresponds to standard unix encoding

TeXShop can load and save files in Iso Latin format, using code from 
Martin Heusse. This encoding can be chosen with a preference item; the 
previous encoding, Mac OS Roman, remains the default. Iso Latin encoding 
makes it possible to type accented characters directly into the source 
file if certain packages are included with the tex source. *	

I MUST add that mac OS Roman string encoding also makes it possible to 
type 8 bit chars (accented)
in latex with code with just as cp1251and isolatin1

\usepackage[applemac]{inputenc}

So TeXShop was accent aware since version 1.0.

What is really new is that now you can share your file between your mac 
os and your UNIX workstation, without any translation.

Unfortunately, this should not be an application wide preference item, 
just a file to file choice...
