[OS X TeX] includegraphics with TeXShop

Yes.

for pdfLaTeX:  PDF, JPEG, PNG and some TIFF variants.
for LaTeX+GhostScript: EPS files only.

Yes, using \DeclareGraphicsExtension and \DeclareGraphicsRule .
But you really don't need it (see below).

I usually use GraphicConverter to make a JPEG and/or a PNG, 
for every image that has come from an external source.

Alternatively, use  epstopdf  to convert .eps graphics to PDF.
This makes them *much* smaller.

Now \includegraphics works like a charm.
