[OS X TeX] Page size, using plain, TeX and Ghostscript

How do I communicate to teTeX (I'm using plain TeX, with TeX and 
Ghostscript) the fact that I want to use, say, legal/landscape paper 
instead of the default letter. Or specify an arbitrary page size in 
place of the default letter size.
