To an extent I agree. There are a fair number of (gasp!) commercial 
maths fonts available - Lucida, Lucida Bright (sans serif), a few 
others (see The laTeX Companion approx pg 520). Euler IMO looks great 
with a fair number of text fonts in the vein of Hoefler, Palatino, and 
others.

I'm interested in "picking" the required glyphs out of these nice 
full-features fonts that we can access in XeTeX, but I really don't 
know if that's particularly feasible. (I mean, there's greek letters 
and integrals and summations and all sorts, but it's more than just 
telling XeTeX to shove them in there - or is it?)

If you read the section of the TeXBook (which I've admittedly only 
skimmed), you'll see why maths fonts are so hard to create and, being 
TeX-only, this is a fairly un-lucrative proposition for a font 
designer.
