You can, but it requires mucking about in Interface Builder. If the 
authors
of TeXShop and iTeXMac would be so kind and unassign these keyboard 
shortcuts
for use in macros (instead of the rather useless italic and bold), that 
would
be nice.

I agree with the other comments, that bold should not be a command,  
but it
should be tied to the logical markup you want to achieve. I don't mind 
cmd-i
and \emph{#SEL##INS#}, but I would object to cmd-i \textit{#SEL##INS#}, 
even
though it is more in line with other applications (but that is why I 
don't
use other applications in the first place).
