[OS X TeX] PS font and TeXshop : as easy as in Textures ?

I am begining to learn how to use TeXshop.

I a working under plain and I need to use
Ps fonts of the System (Helvetica and Textiles).

Is the trick as simple as in Textures,
where you need to type  is

\font\toto=Textile at 10pt

La petite fille est all\'ee \`a {\toto l'\'ecole}
avec son panier.

More generally, what are the fonts available ?

Or do I need to list the LaTeX files
to see how it is managed ?
