[OS X TeX] xelatex.fmt not found

I had the same problem a week ago, and it is indeed a matter of  
hyphenation patterns; in my case commenting out the Magyar/Hungarian  
and Serbian Cyrillic hyphenation patterns in language.dat was a  
sufficient workaround for fmtutil-sys to create xelatex.fmt.
