I am not sure this is meaningful.  I guess that in order
to decide which distiller it uses, TeXShop sets this.
In other words, simpdftex might get called with
different "--distiller=" options.

It is ghostscript that is broken here.  They set as default
an option that alters the files according to its own will
and it is difficult to override in a non-cli environment.
And I stand but what I state: this is a *broken* behaviour.
