I'm using eclipse to edit latex, with the texlipse plugin. It's not  
perfect, but it does folding, a drag/drop outline view, completions,  
and even displaying some of the math characters when choosing  
completions.

As an editor it's probably so-so, but the win for me is that it's  
tightly hooked into both CVS and a local versioning system, so  
keeping versions becomes mostly automatic - being able to go back to  
how the document was 3 hours ago without having a whole bunch of  
copies kicking around is invaluable.
