If you use tooltips on this Preference Pane (hover you cursor over) 
on the `Foreground' and `Foreground prominence' settings you'll see 
that these have no effect on the pdf copy.

On the other hand, you can do all you want and more within keynote 
itself. alternatively, you can set background colour in certain LaTeX 
document types like Beamer and this will be retained in the pdf copy.
