Howdy,
You say you've been using TeXShop successfully for a while. Have you used LaTeXiT successfully by itself? If you can't compose an equation in LaTeXiT make sure you have the LaTeXiT->Preferences->Composition options set as in the enclosed pdf.

Of course this assumes you have MacTeX installed as your TeX Distribution.
