This actually isn't what you want to do.  TeXShop is a front end for  
the MacTeX distribution.  Your plugin need to access that  
distribution, not TeXShop.  TeXShop has nothing to do with it.

I don't have Thunderbird, so I can't try the plugin, but if there's a  
setting within the plugin to set the path to the all the tex  
executables, it is /usr/texbin on a Mac.
