You can use the TeX Live Utility (should be in your Applications/TeX folder) to globally change the paper size. Open TeX Live Utility and there's a menu item in the Actions menu.  If this doesn't solve your problem, then you may need to give more information.

(BTW, please don't reply to other threads to post a new message, now this topic and the previous topic (TeXShop 3.03) are mixed together in a single thread.)
