I'd try to compile the PDF file with TeX first. This format can be converted to other formats. It's also possible to copy manually the PDF pages and paste them into some office text programme. This could even save text markup.
Another option is to use detex. This little utility (accessible from the command line or from inside TeXShop, I think) can remove the (La)TeX markup and create a text file which can be inserted into some office text programme and than saved in some DOC file format.
It might also work to convert the TeX file(s) into XML format. Some office text programmes can handle XML.
OpenOffice once had a convertor utility to produce LaTeX. Maybe there exists a utility to help import TeX files.
TeX4ht and latex2rtf might be other options.
