Howdy,

What you replaced was the version that is put into ~/Library/TeXShop/Documents/Tips&Tricks/.

The file that gets displayed via the Help menu item is contained in TeXShop.app/Contents/Resources/English.lproj

At a later date that is expected to change. But for now…
