Changing to TeXShop.app and then Change All does not work. Is there somewhere in the archives that tells how change to metadata to reflect TeXShop.

When two applications declare the same UTI for a given tag (tag == extension), Launch Services chooses one of them somehow. As far as I know, the user has no control over this; Apple's heuristic is opaque, and they refuse to deal with the problem.

One thing you might try is deleting or zipping all copies of TextWrangler and BBEdit, then rebuilding the LS database. Set TeXShop to be the default for .tex files using Finder, and who knows, maybe the icons will stick after reinstalling TextWrangler.
