[OS X TeX] LaTeX won't format emph

Look again at your console window for lines that look like
LaTeX Font Warning: Font shape `T1/scab/m/it' undefined
(Font) using `T1/cmr/m/n' instead on input line 29.
Those will tell us what LaTeX was looking for but failing to find, giving us a bigger hint.
