[OS X TeX] Not macOS specific, but (La)TeX nonetheless: 2 math formula questions

Hello community,
I had some need to do some TeX formula editing and it has been a while.
I was wondering why in this formula
$$K_{\mbox{\small Org}} = \sum_{L=0}^{L_{\hbox{\tiny Org,max}}}{\left(\frac{\displaystyle \sum_{e=1}^{e=e_{\hbox{\tiny max}}}k_e}{(L+1)e_{\hbox{\tiny max}}}\right)}$$
the formula inside the large () is not vertically centered (and how I get it that way).
I also was wondering if a larger initial \sum symbol woul dbe a good idea and how to get it.
(And yes, the second sum could become a simple \overbar as it is part of a simple average)
