That's easy: open -a Aquamacs\ Emacs <file>

Create an UTI (Universal Type Identifier) for Aquamacs Emacs. Make
the files that you would like to open in Aquamacs Emacs be of that
type. Spotlight should be able to reveal some information about UTIs.
