The Latex Companion recommends Optima as the companion sans serif font
(though it is not strictly a pure sans, but a tapered shape.) But I've
never seen them actually paired up and it is possible that they would
not work well together. A common pairing that designers use with
garamond is to put it with Myriad---but this is not pre-assembled on
CTAN as so many others are (including Optima). Myriad also makes a good
sans serif for use with Minion.
Most other sans serifs are too modern in their appearance---too
influenced by Bauhaus and similar movements. Your choice is therefore
very limited.
(BTW this is not a question that you will find answered in Honig's book
TeX Unbound.)
