Just after sending this message I'm opening the actual 2.2.0b17 and noticing things have changed, ie made more consistent:

The "PostScript name" column has been renamed to "PostScript font", and the "coding" column to "PS fontname".

So, to summarize, the columns where you can edit Textures-specific metrics information are "PS fontname" and "encoding", whose names match their functions.
